세척 및 손질법 1. 달래는 잔뿌리가 많은 편이므로, 흐르는 물에 한 뿌리씩 살살 흔들어 깨끗이 헹궈주세요.
2. 달래 알뿌리에 붙어있는 겉껍질과 이물질을 제거하세요. 알뿌리 밑부분의 검은 심도 다소 억세므로 함께 잘라내는 것이 좋아요.
보관법 ・사용하고 남은 달래는 물을 뿌린 뒤 키친타월로 감싸주세요. 그대로 비닐팩에 넣어 냉장실에 보관하세요.
장아찌 담그는 법 ・재료 : 달래, 진간장, 물, 식초, 설탕, 밀폐용기
1. 달래를 3~4cm 크기로 잘라 밀폐용기에 담아주세요.
2. 진간장, 물, 식초, 설탕을 2:2:1:1 비율로 섞은 후, ①에 그대로 부어주세요.
3. 상온에서 2~3일 정도 숙성해 주세요.
